Perfect weekend party meal
Ingredients
2 lbs chicken, cut into 2 inch cubes
1 fresh pineapple, cut into 2 inch cubes
1 pint cherry tomatoes
3 medium onions, quartered
2 pounds red, yellow and/or orange sweet peppers, cut into 2 inch cubes
Olive oil
Salt
Pepper
Marinade ***
Cookware
Wood skewers
Cutting board
Chef's knife
Grill
Pan
Silicone brush
Measuring cups
Measuring spoons
Medium bowl
Small whisk
Directions
Soak 12 inch wooden skewers in water for 1 hour.
In a medium bowl, mix together all marinade ingredients. Set aside.
Thread chicken onto skewers and alternate with pineapple, tomatoes, peppers and onion. Place in large baking pan.
Brush loaded skewers with olive oil. Season with salt and pepper.
Baste with marinade. Refrigerate and allow marinade to soak for 30-60 minutes.
Grill on medium-high heat for 10-15 minutes.
Notes
Serve with tumeric rice, soy sauce and feta cheese
