Buzzin Blueberry Coffee Cake

Ingredients

CAKE:

  • 2 cups flour

  • 1/2 cup infused sugar

  • 1/4 cup sugar

  • 2 1/2 teaspoons baking powder

  • 3/4 teaspoon salt

  • 1/4 cup shortening + extra for greasing baking pan

  • 3/4 cup whole milk

  • 1 egg, lightly beaten

  • 2 cups fresh blueberries, rinsed



CRUMB TOPPING:

  • 1/2 cup sugar

  • 1/3 cup flour

  • 1 teaspoon cinnamon

  • 1 tablespoon cannabutter, softened

  • 3 tablespoons butter, softened



GLAZE:

  • 1/2 cup powdered sugar

  • 1 teaspoon vanilla extract

  • 2 teaspoons hot water


Cookware

  • 9 inch square baking pan

  • Large mixing bowl

Directions

  1. Heat oven to 375°. Grease a 9 inch square cake pan with shortening.

  2. In a small bowl, mix together crumb topping ingredients until combined.

  3. in a large mixing bowl, blend together flour, sugars, baking powder, salt, shortening, milk and egg. Using a silicone spatula, carefully stir in blueberries. Spread batter into pan. Sprinkle with crumb topping.

  4. Bake 45-50 minutes or until an inserted toothpick comes out clean.

  5. Allow cake to cool. In a small bowl, mix together glaze ingredients. Drizzle cake with glaze.
