About the Recipe
If you don't like coffee cake, you haven't tried this one. Full of cannabis and blueberries, this is the perfect pastry to enjoy with your morning coffee or as a late night snack.
Ingredients
CAKE:
2 cups flour
1/2 cup infused sugar
1/4 cup sugar
2 1/2 teaspoons baking powder
3/4 teaspoon salt
1/4 cup shortening + extra for greasing baking pan
3/4 cup whole milk
1 egg, lightly beaten
2 cups fresh blueberries, rinsed
CRUMB TOPPING:
1/2 cup sugar
1/3 cup flour
1 teaspoon cinnamon
1 tablespoon cannabutter, softened
3 tablespoons butter, softened
GLAZE:
1/2 cup powdered sugar
1 teaspoon vanilla extract
2 teaspoons hot water

Directions
Heat oven to 375°. Grease a 9 inch square cake pan with shortening.
In a small bowl, mix together crumb topping ingredients until combined.
in a large mixing bowl, blend together flour, sugars, baking powder, salt, shortening, milk and egg. Using a silicone spatula, carefully stir in blueberries. Spread batter into pan. Sprinkle with crumb topping.
Bake 45-50 minutes or until an inserted toothpick comes out clean.
Allow cake to cool. In a small bowl, mix together glaze ingredients. Drizzle cake with glaze.
